The amazing I can’t believe it’s not chicken sandwich

When I tasted the vegan chicken sandwich, I couldn’t believe how good it was. You can really make an easy, cheap and healthy alternative to a chicken sandwich.

I have been following the youtuber High Carb Hannah for a while. I really enjoy her videos and her lifestyle inspires me. I am not vegan like her – but her less meat and more carbs have inspired me in my own weight loss journey with great success.

So when I came across her video of the “fake chicken sandwich” I just knew I had to give it a go. (See her video of making the sandwich below).

I slighty changed the recipe a bit.

Instead of ground flax, I soaked flax seeds.

Also I used different spices.

The sandwich is amazing. It tastes really really good. It is really easy to make.

When the teenager saw it on the mealplan, where I called it “the fake chicken sandwich” he was instantly entriqued.

However, if I had told him it was a patty made from cauliflower he would probably not eat it so enthusiastically.

So I told him that it was a sandwich that was made of fake chicken. So not chicken but it would taste kind of like chicken.

I made the patty one afternoon, before Theis and I went to a meeting and dinnertime would be well overdue by the time we got home to the teenager. Usually this is when we fall into the “let’sĀ get pizza” trap. So I made these and they were so good!

You can spice the patties anyway you like. I chose Lea and Perrigin worchestersauce, sriracha, garlic and all round spice mix. But I imagine cajun or onion or ginger would also be awesome.

  1. Put flax seeds in a bowl and add water just enough to cover the seeds. Let them sit for half an hour or more until they feel slimey.
  2. Heat oven to 425 F or 200 C. Cut cauliflower into florets and roast without oil in oven for 30 minutes.
  3. Boil the quinoa in 2 cups of water. When the water is boiling reduce the heat and let it simmer until the water is absorbed.
  4. When the quinoa and cauliflower is done, mix them together in the foodprocessor along with the flax seeds and your season of choice.
  5. Add the breadcrumbs into the mixture.
  6. Make the mix into patties and fry them without oil on a non stick pan for about 10 minutes on medium heat on each side. Eat them in a pitapocket slized open with lettuce, tomato, cucumber, onion etc.

In her recipe she doesn’t add that much water when cooking the quinoa. However I found it much better to add more water. Also I didn’t use ground flax but flax seeds – which is much cheaper. It worked like a charm.
