Sweet and spicy beetroot falafels

Every year I look forward to beetroots coming in season, because I can make beetroot falafels. They are sweet and spicy and oh so tasty!

Even the teenager in the house enjoys them. As the matter of fact – he enjoyed them so much, he had too much to eat last night and had a stomachache.

Best part of the beetroot falafel other than taste? Very cheap and very low cal. I like to put leftover rice in them but you can put potatoes in them instead.

Its just a good way to get rid of leftovers.

I like my falafels spicy – but they don’t have to be. If you are not into the whole spicy thing, remember not to add the red curry paste. However I encourage you to try – because they are really good and the spice will play with your tastebuds.

If you are very into spice – feel free to add more curry paste.

There is a restaurant in Copenhagen that serves up the best, juicest and largest beetroot falafels. Whom am I kidding – they are steaks! The restaurant always serve the steaks with a salat made of lentils, seaweed, carrots and sesame seed. Oh my gosh.

I like to go there with a friend I have, who is a vegetarian, and I never seem to get around trying something else on the menu. Do you know that feeling? I mean, if you have tried a little piece of heaven – why venture out when heaven is right there in front of you, and you have a chance to go grap it!

Eat the beetroot falafels with salad and perhaps an easy potato salad.

Just remember – if you are trying to lose weight, eat the potato salad as a little sidedish and fill your plate with salad and falafels.

If you are feeling frisky – you can eat the falafels with the seaweed salat like the restaurant in Copenhagen. That is my favorite combo. YUM. However it is rare I get to eat that, because seaweed is not cheap.

These beetroot falafels are filled with taste - cheap for the pocket to make, and extremely low in calories. Eat them with a green salad and perhaps a potato salad. You can choose how spicy you want the falafels to be. If you prefer very spicy - add more than the recipe suggest. If you don't like spicy, just avoid adding thai red curry paste in the mix.

Instructions
  1. Peel all vegetables and combine them in a foodprocessor to blend.
  2. Add garlic, eggs, red curry paste, rice and oats to the mixture
  3. Pour the mixture into another mixing bowl and add flour, salt and pepper and stir. The mixture must be firm. If not, add more flour.
  4. Put the bowl of mixture into the refridgerator and let it rest for half an hour.
  5. When rested, sculpture the falafel by the use of a tablespoon and your hand and fry them on a pan, either without oil or a little bit of coconut oil.
