These beetroot falafels are the reason beetroot exist!
Every year I look forward to beetroots coming in season, because I can make beetroot falafels. They are sweet and spicy and oh so tasty!
Even the teenager in the house enjoys them. As the matter of fact – he enjoyed them so much, he had too much to eat last night and had a stomachache.
Best part of the beetroot falafel other than taste? Very cheap and very low cal. I like to put leftover rice in them but you can put potatoes in them instead.
Its just a good way to get rid of leftovers.
I like my falafels spicy – but they don’t have to be. If you are not into the whole spicy thing, remember not to add the red curry paste. However I encourage you to try – because they are really good and the spice will play with your tastebuds.
If you are very into spice – feel free to add more curry paste.
There is a restaurant in Copenhagen that serves up the best, juicest and largest beetroot falafels. Whom am I kidding – they are steaks! The restaurant always serve the steaks with a salat made of lentils, seaweed, carrots and sesame seed. Oh my gosh.
I like to go there with a friend I have, who is a vegetarian, and I never seem to get around trying something else on the menu. Do you know that feeling? I mean, if you have tried a little piece of heaven – why venture out when heaven is right there in front of you, and you have a chance to go grap it!
Eat the beetroot falafels with salad and perhaps an easy potato salad.
Just remember – if you are trying to lose weight, eat the potato salad as a little sidedish and fill your plate with salad and falafels.
If you are feeling frisky – you can eat the falafels with the seaweed salat like the restaurant in Copenhagen. That is my favorite combo. YUM. However it is rare I get to eat that, because seaweed is not cheap.
