Usually when beetroots are in season, I yearn to find some way to incorporate this beautiful root. It is so increadibly cheap and healthy, that it is a shame to pass it in the supermarket.

So one day while browsing around on Pinterest, I came across a beautiful picture of beetroot bread.

The recipe is in German and I decided very fast, that I didnt want to make that exact recipe, because the recipe calls for sugar and olive oil – and I want to be able to bake a healthier alternative.

So I started googling around and found a Danish recipe for beetroot buns. So from that recipe I developed this beautiful and delicious homemade bread.

Ok so I am normally a shake and bake kind of woman.

I hate kneading.

But when I don’t have to knead, I am all up for it!

Do I have to say I am baking up a storm?

And this bread is so delicious, I am baking it once or twice a week these days. Everytime I go somewhere, I bring the bread and make people happy. And my family can’t get enough of it either.

The bread is chewy because of the yogurt – and has a sweeter taste because of the beetroot.

And then it is just superfunky looking.

All you need is yogurt – the more high in protein – the better. Preferably greek yogurt or even better, the Icelandic version of skyr, if you can find it.

Add beetroot.

The bread tastes like a little piece of heaven.

This bread is super easy to make, cheap and low in calories. But best thing of all? No kneading! The bread is chewy because of the yogurt - and has a sweeter taste because of the beetroot. Add any kind of natural flavor yogurt you like - however I recommend yogurt that is high in protein. For this recipe I used the icelandic skyr, but Greek yogurt is fine.

Instructions
  1. Start by adding lukewarm water in a big bowl, add the yeast and stir to dissolve.
  2. Add yogurt, salt, oats, beets and wholeweat flour. Stir with a spoon.
  3. A little by little stir in the all-purpose flour. Stir with the spoon, add as much flour as it gets hard to stir - but not as much as it is not longer sticky in texture.
  4. Cover the bowl with a clean towel and set it somewhere warm, like a close to a window with sun or a radiator. Let it rest for an hour.
  5. Preheat oven to 400 F (220 C).
  6. When the bread has rested place the dough on large cookie sheet covered with baking paper.
  7. Bake for 40 minutes.
