This delicious homemade beetroot bread is very easy to make and no kneading required.
Usually when beetroots are in season, I yearn to find some way to incorporate this beautiful root. It is so increadibly cheap and healthy, that it is a shame to pass it in the supermarket.
So one day while browsing around on Pinterest, I came across a beautiful picture of beetroot bread.
The recipe is in German and I decided very fast, that I didnt want to make that exact recipe, because the recipe calls for sugar and olive oil – and I want to be able to bake a healthier alternative.
So I started googling around and found a Danish recipe for beetroot buns. So from that recipe I developed this beautiful and delicious homemade bread.
Ok so I am normally a shake and bake kind of woman.
I hate kneading.
But when I don’t have to knead, I am all up for it!
Do I have to say I am baking up a storm?
And this bread is so delicious, I am baking it once or twice a week these days. Everytime I go somewhere, I bring the bread and make people happy. And my family can’t get enough of it either.
The bread is chewy because of the yogurt – and has a sweeter taste because of the beetroot.
And then it is just superfunky looking.
All you need is yogurt – the more high in protein – the better. Preferably greek yogurt or even better, the Icelandic version of skyr, if you can find it.
The bread tastes like a little piece of heaven.
